    2017 has given me the gift of Valentine’s Day and Pi Day with my favorite toddler. A BIG Thank You to Bonny for alerting me to this double goodness and then sharing a delicious recipe for Apple Hand Pies. I’m honestly not sure Charlie even knew about Pie before today (and I’m positive he still doesn’t know about Pi) – but I think he might remember now! We followed the recipe pretty much as written (except that I bought Pillsbury pie crusts). We peeled and chopped apples and then cooked them in butter with a little sugar and cinnamon.     I’m Blaming the Creamed Spinach.

    I had my day planned out to the minute – photos to scan, a special blog post to write, tomatoes to roast, meatloaf to mix, a walk, a shower, small group, meatloaf to bake, knitting with friends … and finally creamed spinach so I could get dinner to Katie’s in time for her to take finished photos of Sigla. (whew!) I’ve made the recipe before, but I don’t remember how long it took. Ellie says it cooks for 10 minutes so 10 minutes is what my schedule allowed. Of course it took longer – more like 30. Maybe because I doubled it? or maybe because I used non-fat milk instead…

    Throwback Thursday | Zucchini Fritters.

    Remember back a few months when we shared favorite foods our mom’s used to make? One of mine was zucchini fritters: Mother had a vegetable garden when we lived in New Jersey (my high school and college years). Of course she grew zucchini and of course there was too much. I remember an entire meal of zucchini fritters…just us…one summer when I was home from college. (that might be the closest we came to a popcorn meal 🙂 I managed to find a few photos of that garden from the summer of 1981 (I was home after finishing my sophomore year of college).     cooking light.

    …I’ve tried to make eating healthy a way of life, but honestly, my cooking isn’t always in line with that goal. lately it seems to be a lot of baking – a mix of “healthy” and “yummmm, that’s delicious” (and it should be because there’s a LOT of butter in it!) really, it seems like it’s a lot easier not to cook. I can just cut up vegetables or make a salad or a wrap. but when the weather turns chilly like it has this week, I feel the urge to cook – to turn on the stove and the oven, to stir, to smell cooking, and to eat something hot. sara’s…
