Cheers | Mint Berry Spritzer.

I know at least a few of y’all recall that I promised* a new cocktail this month. My sister, my cocktail muse, came over Tuesday evening – maybe you saw us on Instagram?and very close readers might’ve noticed that bright pink drink to the left of my laptop in the lower left?

Yep, that was the first draft of the Berry Spritzer! Frozen berries (from Costco – a blend of blueberries, blackberries, and raspberries) are a staple in our freezer and they are awesome for cocktails because they get really juicy when they thaw. I figured I’d muddle a few thawed berries with some ice and gin (duh) in the shaker, shake it up, pour it into a glass with a little more ice, add seltzer (I chose the raspberry lime spindrift), and call it done.

It was fine, but it wasn’t Cheers-worthy. I kept thinking.

Meanwhile, yesterday, I thought about making the Summer in Kentucky Mule (gosh, I can’t believe it’s been a year!). By the way, our mint is going crazy right now.I mixed up the mint simple syrup (2 parts water, 1 part sugar, leaves from 3 stems of mint – I like it to be really mint-y and not very sweet) and added it some iced tea, and later to a gin & tonic. and I realized it was the missing pizzazz for that berry spritzer.  I tweaked the other ingredients, too, and now it’s ready to share!

Mint Berry Spritzer – serves 2

1 oz frozen berries, thawed (if you only have fresh, I’m sure they’d be fine … you might want to add a little more mint syrup to make up the sweetness)
3 oz gin
1 oz mint simple syrup
lemon or plain sparkling water
2 lime wedges
a few mint leaves for garnish

Add a few cubes of ice to a shaker, along with the berries and muddle with a spoon. Add the gin and mint syrup and shake. Fill two highball glasses about 1/3 with ice. Split the shaken mixture between the glasses. Top with sparkling water and a lightly squeezed lime wedge. Garnish with the mint.

*I also promised a Caesar salad recipe and Sara’s been busy … we haven’t time to work on it … we do still have a week, but that promise might not be met until next month!

    Okay, now I know exactly what to do with our patch of mint! I think some mint simple syrup would be great to add to some fresh-brewed iced tea, too.

    Sounds so refreshing!! We have a bunch of mint, but we usually end up making mojitos (quick and no simple syrup needed). Cheers to you Mary. Mid=weekend now and life is good. Enjoy!

    Mint is one of my favorite flavors and this spritzer looks so pretty! I can’t honestly say that I’ll make it as written (gin is not my favorite), but I think it might be good without alcohol, or maybe substituting vodka for the gin. The “You May Also Like” under your post served to remind me of the Sunset Cocktail that you and your sister came up with four years ago (!) and how much I enjoyed it. There will definitely be a sunset cocktail in my hand during sunset sometime this week!

    Gin + Summer = perfection… and adding some berries to the mix is brilliant! I don’t have any frozen berries…but I do have some homemade jam I am going to try with this! Thank you for the recipe!

    Um, yum! That looks delicious. Matthew made me me mint juleps on Saturday night, which is another great use of our mint bushes. But I’m with Sarah – mint simple syrups sounds amazing to have around. I love all of your pictures – what a lovely week!

    I’m about 1/3 of the way through Klara and the Sun. WHAT KIND OF WORLD ARE THEY LIVING IN!? (Don’t answer that.) Thanks for the encouragement to read it despite the so-so reviews, I’m loving it 🙂

    Mint is refreshing in the summer. Alcohol is a trigger for migraines so I’d have to do without it but a minty berry spritzer sounds lovely. I hope your weekend was lovely. Cheers to you.
