Hello friends and happy Wednesday! I’m delighted to be joining in with Kat and friends today with a knitting project … and a cocktail!
A few weeks back, I posted about Thea Colman’s latest Hard Cider. Since then, the yarn arrived (I do think it’s a very nice pink-red), I knit a swatch and finally, cast on. The pattern begins with 7″ of 3×3 rib, which seems to be taking ages (I started Monday evening and I’m still not to the halfway mark), but the yarn – Rowan Felted Tweed – is nice to knit. and I’m enjoying the size 5 needle.
I’m also enjoying the Hard Cider cocktail (pictured above on the right). After much trial and error and a few more batches of spiced honey syrup (I ended up omitting the apple), I think it’s even Baby Cocktails worthy!
Hard Cider Mule – serves one
1 oz spiced honey simple syrup*
1 oz gin
a 12-oz bottle of hard cider (you’ll need about half for one drink)
a lemon wedge
Combine the syrup, gin and a generous scoop of ice in a highball glass. Top with hard cider and a squeeze of lemon.
*Spiced Honey Simple Syrup
1 cup water
1/3 cup honey
2 heaping tablespoons of mulling spice mix (if don’t have any in your cupboard, a blend of whole cloves, allspice, cinnamon and coarsely grated orange peel will do)
Heat everything over medium heat until the honey dissolves. Let stand an hour or two (less if you’re using “real” spices and more if you’re using a mix) and then strain the syrup into a jar (it will keep practically forever in the refrigerator).
The syrup is also delicious with bourbon … I’m thinking a lowball with maybe a bit of applejack?
